Chicken 'N Vegetable Stir-Fry(Heart Healthy) - cooking recipe

Ingredients
    1 envelope onion soup mix
    3 Tbsp. soy sauce
    2 tsp. cornstarch
    1/2 tsp. sugar
    1/2 tsp. ginger
    1 1/2 c. water
    3 Tbsp. vegetable oil
    1 lb. boneless chicken breasts, cut into thin strips
    hot cooked rice
    2 c. broccoli flowerets
    1 c. snow (sugar) peas
    1 medium green or red bell pepper, cut in thin strips
    1/2 c. roasted peanuts
Preparation
    Thoroughly combine the first 6 ingredients.
    Set aside.
    Heat oil in wok or large skillet over high heat until hot.
    Add chicken and stir-fry for 3 to 5 minutes.
    Add vegetables and soup mixture. Bring to a boil; reduce heat and simmer, uncovered, about 5 minutes or until sauce is thickened.
    Stir in nuts and serve over hot rice.
    Sometimes I substitute frozen French beans for the broccoli and snow peas.
    Yield: 6 servings.
