Mom'S Spanish Rice - cooking recipe

Ingredients
    1 c. uncooked rice
    1/4 c. butter or oil
    1 medium onion, chopped
    1 c. water
    1/2 medium green pepper
    2 c. stewed tomatoes with juice
    1 tsp. salt
    dash of pepper
Preparation
    Heat butter/oil in saucepan; add onion, green pepper and rice. Cook and stir over high heat until lightly browned. Add tomatoes, water, salt and pepper. Mix well. Bring gently to boil. Cover tightly. Lower heat and simmer gently for 30 minutes or until rice is done.
