Ingredients

1 lb. pork sausage
1 c. chopped onions
3/4 c. chopped bell pepper
1 (2.5 oz.) jar sliced mushrooms, drained
1 (14 oz.) jar pizza sauce flavored with pepperoni
1 (14 1/2 oz.) can diced Italian-style tomatoes (with basil, oregano, & garlic)
3 to 4 c. water
1/4 c. shredded Parmesan Cheese
Shredded Mozzarella cheese (to sprinkle over top)
Preparation

Combine sausage, onions, and bell pepper in soup pot.
Saute until sausage is fully cooked.
Drain excess grease.
Add mushrooms, pizza sauce, tomatoes, and water.
Cook over medium-high heat for about 10 minutes.
Stir in the Parmesan and keep hot until time to serve.
Top each serving of hot soup with a generous sprinkling of mozzarella cheese.
Makes 6 to 8 servings.
