Pecan-Chicken Salad - cooking recipe

Ingredients
    2 c. cubed cooked chicken breasts
    1 c. cooked brown rice
    1/2 c. pecans, coarsely chopped
    1 small red onion, chopped
    1 celery stalk, chopped
    1/2 c. fat-free mayonnaise
    1 Tbsp. lemon juice
    1/2 tsp. white pepper
    1/2 tsp. thyme
    1/2 tsp. basil
    romaine and red leaf lettuce
    1/4 c. snipped fresh parsley (garnish)
Preparation
    In a medium bowl mix the chicken, rice, pecans, onion and celery.
    In a small bowl whisk the mayonnaise, lemon juice, pepper, thyme and basil.
    Add the dressing to the chicken mixture and mix well.
    Serve on lettuce and garnish with the parsley.
    Yields 4 servings.
