Healthy Macaroni And Cheese - cooking recipe

Ingredients
    5 c. cooked macaroni
    2 c. grated Cheddar cheese or low-fat substitute
    1 3/4 c. skim milk
    1 (12 oz.) carton no-fat cottage cheese
    1 large garlic clove, minced
    1 1/2 c. chopped onion
    1 1/2 c. chopped bell pepper (any color)
    6 cherry tomatoes, quartered
    pepper
    Parmesan cheese
    paprika
Preparation
    Mix drained macaroni with Cheddar cheese and milk.
    Heat and stir until cheese is melted.
    Spray skillet with cooking spray. Cook garlic, peppers and onion for 5 minutes.
    Mix with macaroni and cheese; add tomatoes, pepper and cottage cheese and mix well. Coat 2-quart ceramic dish with cooking spray and spoon mixture into dish.
    Sprinkle with Parmesan cheese and paprika.
    Bake 40 minutes (20 minutes covered and 20 minutes uncovered) or until preferred consistency and brown on top.
