Boiled Venison - cooking recipe

Ingredients
    7 lb. deer roast
    1 gal. water
    3 Tbsp. salt
    2 Tbsp. red pepper
    1 1/2 c. vinegar
Preparation
    For a seven
    pound
    roast,
    parboil
    it
    in 1 gallon of water to which
    has
    been
    added red pepper, salt and vinegar. Let simmer for 1 hour, then pour off the liquid.
    Put meat set in cold water about 30 minutes, pour this liquid off.
