Carrot-Pecan Casserole - cooking recipe

Ingredients
    3 lb. carrots, sliced
    2/3 c. sugar
    1/2 c. butter or margarine, softened
    1/2 c. chopped pecans, toasted
    1/4 c. milk
    2 large eggs, lightly beaten
    3 Tbsp. all-purpose flour
    1 Tbsp. vanilla extract
    1 tsp. grated orange rind
    1/4 tsp. ground nutmeg
    garnishes: carrot curl and fresh parsley sprigs
Preparation
    Cook carrots in a small amount of boiling water in a medium saucepan for 12 to 15 minutes, or until tender.
    Drain carrots and mash.
    Stir in sugar and next 8 ingredients.
    Spoon into a lightly greased 2-quart casserole.
    Bake at 350\u00b0 for 40 minutes.
    Garnish, if desired.
    Yields 10 to 12 servings.
