Ham And Corn Chowder - cooking recipe

Ingredients
    3 or 4 slices salt pork, cut into small pieces
    3/4 c. chopped onion
    2 medium potatoes, peeled and cubed
    1 1/2 c. cream style corn
    Salt and black pepper, to taste
    1 1/2 c. half and half
    1 to 1 1/2 c. chopped, cooked ham
    Paprika, optional
Preparation
    Fry the salt pork until browned.
    Remove the salt pork from the pan and set aside.
    Saute the onions in the fat.
    Cook the potatoes in salted boiling water until soft.
    Drain the cooked potatoes, saving about 1 1/2 cups of the liquid.
    In large soup pot or Dutch oven, combine the salt pork, sauteed onion, potatoes, potato water, and the corn.
    Bring to a boil and immediately reduce the heat and simmer gently for 5 to 10 minutes.
    Season to taste with salt and black pepper.
    Add the cream slowly.
    Add the ham and simmer for another 5 to 10 minutes.
    After the chowder is spooned into the serving bowls, sprinkle with paprika, if desired.
