Hash Brown Potato Casserole - cooking recipe

2 c. shredded sharp Cheddar
1 (10 3/4 oz.) can cream of potato soup
1 c. sour cream
1 c. finely chopped onion
1/4 c. butter, melted
1/4 tsp. salt
1/4 tsp. pepper
1 (32 oz.) pkg. frozen hash brown potatoes, thawed
1 c. cornflake crumbs
1 Tbsp. butter, melted
Preparation

In a large bowl, combine cheese, soup, sour cream, onion, 1/4 cup butter, salt and pepper.
Mix well.
Fold in thawed potatoes. Turn mixture into a greased 9 x 13-inch baking dish.
Toss the cornflake crumbs and 1 tablespoon butter and sprinkle over the potato mixture.
Bake at 350\u00b0 for about 1 hour or until golden brown and the potatoes are tender.
Serves 8 to 10.
