Black-Eyed Pea Salsa - cooking recipe

Ingredients
    1 c. frozen black-eyed peas
    1 1/4 c. diced plum tomatoes
    1 c. frozen corn, thawed
    3/4 c. peeled, seeded and diced cucumber
    1/4 c. sliced green onion
    2 tsp. minced jalapeno pepper
    1 tsp. dried basil
    1/2 tsp. sugar
    1/8 tsp. pepper
    1 tsp. oil
    1/4 tsp. salt
    3 Tbsp. vinegar
    1 minced garlic clove
Preparation
    Cook peas to tender.
    Rinse under cold water; drain well. Combine peas, tomatoes and all other ingredients.
    Let stand at room temperature for about 30 minutes.
    Stir occasionally.
    (It's good with chicken breasts and brown rice.)
