Coconut Cookies - cooking recipe

Ingredients
    1 egg, separated
    4 tsp. granulated sugar substitute
    1 c. shredded coconut
    2 1/2 c. cornflakes
    1/3 c. chopped pecans
    1/2 tsp. almond extract
Preparation
    Beat egg whites until stiff peaks form; fold in sweetener.
    Add cornflakes, coconut, chopped pecans and almond extract.
    Drop from teaspoon onto greased cookie sheet.
    Bake at 350\u00b0 for about 12 minutes.
    Yield:
    4 dozen.
    Carbohydrate 2.4 g, protein .3 g, fat 1.1 g, calories 24.
    One cookie = 1/2 fat exchange.
