Spinach Ricotta Dumplings - cooking recipe

Ingredients
    1 c. Italian flavored bread crumbs
    1 pkg. frozen chopped spinach, thawed and squeezed dry
    1 (16 oz.) Ricotta cheese
    1/4 c. Parmesan cheese
    1 tsp. minced dry onion or 2 green onions, chopped fine
    1/4 c. flour
    1/2 tsp. garlic powder
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Mix ingredients with 2 beaten eggs.
    This mixture is very sticky.
    Shape into balls (as you would meatballs).
    Roll lightly in flour; put on cookie sheet lined with wax paper and chill well. In large kettle, bring water to a boil.
    Gently drop in dumplings, one at a time.
    They sink to the bottom.
    Reduce heat to simmer after dumplings rise to top, simmer about 10 minutes. Remove gently with slotted spoon to serving dish.
    Cover with Quick Tomato Sauce and serve.
