Potato Soup - cooking recipe

Ingredients
    1 large onion
    4 Tbsp. butter
    5 lb. diced potatoes
    5 c. water
    2 Tbsp. chopped fresh parsley
    chopped celery to taste
    salt and pepper to taste
Preparation
    Saute onion in butter in large pot.
    Add remaining ingredients and simmer about 20 minutes, until potatoes are tender.
    Cool completely.
    Add 1 large container sour cream.
    Reheat, but do not boil.
