Broccoli With Garlic And Red Chili Pepper - cooking recipe

1 bunch broccoli (about 1 1/2 lb.)
salt
1/4 c. olive oil
3 to 4 cloves minced garlic
dash of dried red chili pepper
Preparation

Trim tough ends of broccoli. Use a paring knife to strip peel from stalks.
Depending on the thickness of stalks, cut broccoli in half or quarters, lengthwise.
Cook broccoli in abundant salted, boiling water until just tender (usually 4 to 5 minutes). Drain within a colander.
Combine olive oil, garlic and red chili pepper in large saute pan.
Cook over a low heat for 2 to 3 minutes or until garlic gives off its perfume.
Add broccoli and salt to taste.
Turn stalks gently, occasionally to coat with oil. Serve broccoli hot, warm or at room temperature.
Serves 2 to 4.
