Pineapple Cream Cheese Pie - cooking recipe
Ingredients

1 (20 oz.) can pineapple chunks
sugar
2 Tbsp. cornstarch
1 tsp. grated lemon peel
1 (8 oz.) pkg. softened cream cheese
2 eggs
1/4 c. milk
1 1/2 tsp. vanilla
1 (9-inch) deep-dish pie shell (unbaked)
Preparation

Drain pineapple; reserve 1/2 cup of syrup.
Mix pineapple, reserved syrup, 1/3 cup of sugar and cornstarch.
Cook, stirring, until it boils and thickens.
Remove from heat; add lemon peel. Cool.
In mixing bowl, beat cream cheese and 1/2 cup of sugar. Add eggs, milk and vanilla; blend thoroughly.
Spoon pineapple mixture into pie shell.
Pour cream cheese mixture on top.
Bake pie on cookie sheet in a 400\u00b0 oven for 10 minutes.
Reduce heat to 325\u00b0 and bake 50 minutes longer.
Cool, then refrigerate.
