1 c. margarine, softened
1 c. sugar
1 c. sifted powdered sugar
1 c. vegetable oil
2 eggs
1 tsp. vanilla extract
4 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cream of tartar

Preparation

Cream butter; gradually add 1 cup sugar and powdered sugar, beating well at medium speed of an electric mixer.
Add oil, eggs and vanilla; mix well.
Combine flour and next 3 ingredients; add to creamed mixture and mix well.
Cover and chill at least 2 hours or overnight.
Shape dough into 1 inch balls; place 3 inches apart on ungreased cookie sheets.
Dip a flat bottomed glass in sugar; flatten cookies to 1/4 inch thickness.
Bake at 375\u00b0 for 5 to 8 minutes or until cookies are set, but not brown.
Remove cookies to wire rack to cool.
Yield about 6 dozen.
