Vegetable Sandwiches - cooking recipe
Ingredients

8 oz. cream cheese
1/2 c. finely grated carrot
1/4 c. grated cucumber, drained
1/4 c. grated onion, drained
1/2 c. grated celery (optional)
1 to 2 Tbsp. mayonnaise (if desired)
Preparation

Soften cream cheese.
Stir in vegetables.
Drain as much liquid as possible off cucumber and onion.
Add mayonnaise for easier spreading, but don't add too much.
Can be refrigerated overnight to let flavors mingle.
Stir good and spread on bread. Put on top slice, trim edges and cut in desired shapes.
Tastes great on wheat bread.
