Vermicelli With Ricotta Sauce - cooking recipe

Ingredients
    1 minced garlic clove
    2 Tbsp. olive oil
    2 Tbsp. butter
    2/3 c. evaporated skim milk
    1 tsp. salt
    1/8 tsp. crushed red pepper
    pepper to taste
    1 lb. part-skim Ricotta cheese
    1/2 c. Parmesan cheese
Preparation
    Cook garlic in olive oil and butter for 1 minute.
    Add milk, salt, red pepper and pepper.
    Bring to an almost boil.
    Remove from heat and add Ricotta cheese and Parmesan.
    Whisk until smooth; heat through.
    Cook vermicelli; put vermicelli and sauce in heated bowl.
    Sprinkle with 1/4 cup Parmesan and 2 tablespoons chopped fresh parsley.
