Ingredients

1/2 c. dry rice
3 eggs
1 can evaporated milk (13 oz.)
1/2 c. sugar
1/8 stick melted margarine
1 tsp. vanilla extract
1 tsp. cinnamon
nutmeg
Preparation

Cook rice; set aside.
In 1 1/2-quart baking dish or bowl, beat eggs, then add sugar and milk.
Spoon-stir until well blended.
Add rice and spoon-stir again.
Add melted margarine.
If consistency is too thick, add a little more milk.
Taste for sweetness.
Add vanilla and cinnamon; stir thoroughly.
Sprinkle with nutmeg and bake at 350\u00b0 for approximately 30 to 40 minutes.
