Ingredients

2 c. skim milk
1/4 c. sugar
1/4 c. quick cook tapioca
2 eggs, separated
2 Tbsp. sugar
1 tsp. vanilla
Preparation

Combine milk, 1/4 cup sugar, tapioca and egg yolks in a 2-quart dish; blend well.
Cook on Full power for 6 to 8 minutes, or until mixture begins to boil.
Stir 2 or 3 times during cooking.
Beat egg whites until frothy.
Gradually add sugar. Beat in vanilla.
Fold into pudding mixture.
Cool.
Chill, if desired.
