Barbecued Alligator - cooking recipe

Ingredients
    2 lb. alligator fillet
    salt and pepper to taste
    vinegar
    4 to 5 tsp. prepared mustard
    barbecue sauce
Preparation
    Sprinkle alligator with vinegar and then roll in the mustard, salt and pepper.
    Let stand for 1 hour.
    Barbecue on low fire without basting for about 1 hour.
    Butterfly fillet by slicing in half and placing the outside down.
    Baste inside with your favorite barbecue sauce and cook until done.
