Shrimply Delicious(Low-Fat) - cooking recipe

Ingredients
    8 plum tomatoes, cut up
    1/4 c. chicken broth
    2 garlic cloves, minced
    1/4 tsp. oregano
    1/4 tsp. basil
    salt and pepper to taste
    1 1/2 Tbsp. white wine (optional)
    1 lb. medium shrimp, peeled or 1/2 lb. shrimp and 1/2 lb. small scallops
    1 Tbsp. olive oil
Preparation
    Cook chicken broth, tomatoes, garlic, oregano, basil and salt and pepper in frying pan for about 5 minutes. Stir once in awhile. Add oil. Cook until tomatoes are soft. Add shrimp and wine. Cook until pink; do not overcook.
    Serve over white rice.
