Fried Eggplant - cooking recipe

Ingredients
    1 eggplant
    oil
    salt
    tomato
    plain yogurt
Preparation
    Peel and slice eggplant.
    Soak in large bowl of salted water for 5 to 30 minutes.
    Dry between paper towels.
    Fry slices in small amount of hot oil.
    Remove and salt to taste.
    Chop tomato and sprinkle on top of slices.
    Top with yogurt.
    Serves 6 to 8.
