Hungarian Veal And Peppers - cooking recipe
Ingredients

1 lb. lean veal, turkey or chicken, cut into 1-inch cubes
1 onion, thinly sliced
2 sweet peppers (any color), seeded and sliced
1 c. de-fatted chicken broth
3 tomatoes, peeled and diced
1 tsp. caraway seed
salt and pepper to taste
Preparation

Spray nonstick pan with cooking spray.
Brown meat cubes over moderate heat; turn to brown evenly.
Stir in 2 tablespoons water and onion.
Cook and stir until water evaporates and onion begins to brown.
Watch carefully.
Stir in chicken broth and remaining ingredients.
Cover and simmer 50 to 60 minutes.
Uncover and simmer until most of liquid evaporates.
Serve with cooked noodles or rice.
