Oatmeal Muffins - cooking recipe

Ingredients
    1 c. oatmeal (instant)
    1 c. buttermilk
    1/3 c. shortening
    1/2 c. brown sugar
    1 egg
    1 c. flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
Preparation
    Mix oatmeal and buttermilk; let stand 1 hour.
    Cream shortening, sugar and egg.
    Sift flour, baking powder, soda and salt together; add to the creamed mixture.
    Mix in oatmeal mixture.
    (Note:
    Can add cut dates or jelly in each muffin at this point.)
    Bake at 400\u00b0 for 20 minutes.
    Can also be put in refrigerator and baked in the morning.
