Pineapple-Ginger Dip - cooking recipe

Ingredients
    2 (8 oz.) pkg. cream cheese, softened
    1/4 c. plus 1 Tbsp. pineapple juice
    1 Tbsp. lemon juice
    1 Tbsp. grated orange rind
    1 1/2 to 2 tsp. ground ginger
    1/4 c. flaked coconut, toasted
    2 Tbsp. powdered sugar (optional)
Preparation
    Beat cream cheese until light and fluffy.
    Stir in remaining ingredients.
    Serve with fresh fruit.
    Yields 2 cups.
