Barbecued Butterflied Leg Of Lamb - cooking recipe

Ingredients
    1 (5 to 6 lb.) leg of lamb, boned and butterflied
    1 lemon, juiced and grated
    3 Tbsp. vegetable oil
    1 Tbsp. grated onion
    1 to 2 cloves garlic, minced
    1 tsp. dried rosemary leaves
    1 tsp. dried tarragon leaves
    1/4 tsp. black pepper
Preparation
    Insert 3 to 4 skewers lengthwise in leg of lamb to prevent meat from curling when cooking.
    Combine remaining ingredients and pour over the lamb.
    Cover and marinate in refrigerator 4 hours or more.
