Oven Omelet - cooking recipe

Ingredients
    2 c. sliced fresh mushrooms
    2 Tbsp. margarine
    egg substitute (equivalent to 6 eggs)
    1/3 c. skim milk
    2 Tbsp. flour
    about 1/8 tsp. freshly ground pepper
    1 1/2 c. reduced fat, sharp Cheddar cheese, divided
    1/4 c. cooked, drained and crumbled bacon or 3 slices, cut up deli ham
Preparation
    Heat oven to 350\u00b0.
    Spray 9-inch baking pan with cooking spray.
    Melt margarine in skillet; add mushrooms.
    Stir-fry until tender; drain and set aside.
    Combine egg, milk, flour and pepper. Beat with whisk until bubbly.
    Stir in 1 cup of cheese, mushrooms and bacon or ham.
    Pour into prepared baking pan.
    Sprinkle with remaining 1/2 cup cheese over top.
    Bake at 350\u00b0 for 25 minutes or until center is set.
    Serves 6.
