Rice-Vegetable Pilaf - cooking recipe

Ingredients
    1 1/3 c. water
    1 tsp. chicken bouillon granules
    1 1/2 c. sliced fresh mushrooms
    1 1/2 c. coarsely shredded carrots
    1/4 c. chopped pecans, toasted
    1/2 c. uncooked rice
    1/4 tsp. pepper
    1/2 c. chopped fresh parsley
    1/3 c. thinly sliced green onions
Preparation
    Combine water and bouillon granules in a saucepan; bring to a boil.
    Add rice; cover, reduce heat and simmer 20 minutes.
    Remove from heat and let stand covered 5 minutes.
    Add mushrooms, carrots, parsley, green onions and pepper.
    Stir well.
    Place over low heat; cover and cook 5 minutes.
    Sprinkle with pecans.
    Serves 8.
