Pumpkin Pancakes - cooking recipe
Ingredients

1 1/4 c. canned pumpkin
3 eggs
2 c. milk
3/4 c. oil
1 tsp. vanilla
1 1/2 c. flour
3 1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. allspice
1 tsp. freshly grated nutmeg
raisins and powdered sugar
Preparation

Mix the first 5 ingredients together in a large bowl.
Add dry ingredients and mix well.
Grease hot griddle with butter; pour about 1/3 cup batter per pancake onto the griddle.
Flip when tiny bubbles appear.
Pancakes are thinner than most and very moist. Sprinkle with powdered sugar and raisins; add syrup, if desired.
