Apricot Nut Bread - cooking recipe

Ingredients
    1 1/4 c. dried apricots
    2 1/2 c. all-purpose flour
    3 tsp. baking powder
    1 tsp. salt
    1/2 tsp. baking soda
    1/4 c. blanched almonds, chopped
    1/4 c. walnuts or filberts, chopped
    1/4 c. flaked coconut
    2 eggs
    3/4 c. sugar
    3 Tbsp. butter, melted
    1/2 c. reserved water from soaking apricots or 3/4 c. warm water
    1/2 c. canned coconut milk
    1 Tbsp. grated lemon rind
    1 Tbsp. lemon juice
Preparation
    Soak apricots in water to cover for 2 hours or until soft. If there is excess water, reserve 1/2 cup.
    Roughly chop the apricots and set aside.
    (Chopping the apricots first, then soaking them is easier.)
    Using a large bowl, combine the flour, baking powder, salt and baking soda; sift 3 times.
    This is to mix all the dry ingredients evenly.
    Stir in the nuts and set aside.
