Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
1 tsp. salt
1/2 tsp. baking powder
2 c. grated, peeled zucchini
3 tsp. cinnamon
3 c. flour
3 tsp. vanilla
1 tsp. baking soda
Preparation

Beat eggs until light and foamy by hand (not mixer).
Add oil, sugar, zucchini and vanilla.
Mix lightly but well.
Add flour, salt, soda, cinnamon and baking powder sifted together.
Add 1 cup nuts (optional).
Mix until blended.
Pour into two 9 x 5-inch loaf pans, greased and floured.
Bake at 350\u00b0 for 10 minutes; decrease temperature to 325\u00b0 and bake for 1 hour.
