Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    2 1/2 c. flour
    1 tsp. baking powder
    2 tsp. baking soda
    1 tsp. salt
    3 tsp. cinnamon
    2 tsp. vanilla
    2 c. raw grated unpeeled zucchini
    dates, pecans or raisins (optional)
Preparation
    Beat together eggs, sugar and oil.
    Sift dry ingredients together and mix with egg mixture.
    Add vanilla and zucchini. Bake for 1 hour at 350\u00b0 in 2 well-greased loaf pans.
    Let cool in pans for 10 minutes.
