Zucchini Corn Bread - cooking recipe
Ingredients

3 zucchini, quartered and sliced
1/2 c. chopped onions
1/2 c. evaporated milk
3 egg whites
1 (8 1/2 oz.) pkg. corn muffin mix
3 oz. Cheddar cheese, shredded
Preparation

Preheat oven to 375\u00b0.
Saute zucchini and onions until golden brown and tender.
In large bowl, beat together egg white and milk.
Stir in muffin mix and blend until smooth.
Fold in zucchini and onions with 1/2 of the cheese.
Pour into 9-inch pie plate sprayed with nonstick spray.
Bake 30 minutes until golden brown.
Melt remaining cheese on top.
Cool.
Serve with Olive Spread.
