Leche Flan - cooking recipe

Ingredients
    8 egg yolks
    2 c. fresh milk
    1 c. sugar
    1 lemon rind, grated
Preparation
    Scald the milk. Beat egg yolks with sugar, milk and lemon rind. Pour into mold lined with caramelized sugar. Place mold in pan half-filled with water and bake at 350\u00b0 for 30 to 40 minutes or until mixture is firm. Then place in the broiler section of the oven to brown top, about 5 to 6 minutes. Unmold from container to a serving dish. Serves 6 to 8.
