Parmesan Potato Casserole - cooking recipe
Ingredients

12 medium size all-purpose potatoes, peeled and quartered
1/2 c. butter or margarine
1 c. milk
3 large eggs, lightly beaten
1/2 c. grated Parmesan cheese
1/4 c. chopped parsley
1 tsp. salt
1/2 tsp. pepper
Preparation

Cook potatoes in water for 15 to 20 minutes or until tender. Drain well and return to pot.
Add butter and mash well. Add milk, eggs, cheese, parsley, salt and pepper; mash until smooth.
Spoon into a lightly greased shallow 3-quart baking dish.
Bake, uncovered, 45 to 50 minutes, until puffed and golden.
