Fresh Apple Cake - cooking recipe

4 c. peeled sliced (Rome) apples
2 c. sugar
2 c. plain flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
2 eggs, beaten
3.4 c. vegetable oil
2 tsp. vanilla
1 c. chopped pecans
Preparation

Preheat oven to 350\u00b0.
In large bowl, stir together apples and 1 cup of sugar; set aside.
Add the other cup of sugar and all dry ingredients in a separate bowl; mix well.
Add eggs, vanilla and vegetable oil together.
Mix liquids into dry mixture.
Fold in apples and sugar.
Place in Bundt pan that has been greased and floured.
Bake 35 to 45 minutes or until golden brown.
