Eggplant Casserole - cooking recipe
Ingredients

1 c. cornbread crumbs
1 c. tomatoes, chopped
1/2 c. chopped onions
1/2 c. grated cheese
1 c. milk
1 egg
1 large eggplant
Preparation

Chop eggplant; cook down low and stir in egg.
Pour in casserole dish and top with cornbread crumbs, tomatoes and onions. Pour milk over mixture and top with grated cheese.
Bake in 350\u00b0 oven 30 minutes.
