Gazpacho Salad - cooking recipe

Ingredients
    2 envelopes unflavored gelatin
    1 qt. tomato juice, divided
    1/4 c. white wine vinegar
    1 clove garlic, crushed
    3/4 tsp. salt
    1/4 tsp. pepper
    1 c. tomato, peeled, chopped and drained
    3/4 c. green pepper, finely chopped
    3/4 c. cucumber, peeled and chopped
    1/2 c. onions, chopped
    1 small jar pimento, drained
    dash of red pepper
    1 head lettuce, broken
    3 to 4 green onions, sliced (tops, too)
    1 c. sliced celery
    1 can mandarin oranges, drained
    1 Tbsp. chopped parsley
Preparation
    Chill 2 hours before serving.
