March Madness Tomato Soup - cooking recipe
Ingredients

1 tsp. margarine
2 Tbsp. minced shallots
3 c. peeled, seeded and dried tomatoes
3/4 c. milk
1/2 c. chicken broth
1 tsp. salt
dash of pepper
oregano (optional)
Preparation

Melt margarine in a large saucepan over medium-low heat and minced shallots.
Cover and cook 5 minutes or until tender.
Add tomatoes, cover and cook 15 more minutes.
Place tomato mixture in container or electric blender.
Cover and blend until smooth.
Add milk, chicken broth, salt and pepper.
Blend for 5 seconds. Return tomato mixture to pan and cook over medium heat until thoroughly heated.
Garnish with oregano and serve with crackers.
