Rice With Smoked Ham - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. onions, finely chopped
    1/4 lb. lean cooked smoked ham, cut into 1/4 inch cubes
    salt to taste (optional)
    1 c. raw rice
    1 bay leaf
    1 1/2 c. fresh or canned chicken broth
Preparation
    Heat 1 tablespoon of the butter in a saucepan.
    Add the onion. Cook, stirring, until the onion is wilted.
    Add the ham and rice and stir to blend.
    Add the broth, salt and bay leaf and cover. Bring to a boil and then simmer for 17 minutes.
    Stir in the remaining 1 tablespoon of butter.
    Remove the bay leaf and serve. Yields 4 servings.
