Spicy New Orleans Chicken - cooking recipe

Ingredients
    1/2 c. onion, diced
    1/2 c. celery, diced
    1/2 c. margarine
    3 lb. chicken pieces
    2 Tbsp. parsley
    1 tsp. thyme
    1 bay leaf
    1 garlic clove, minced
    1 c. water
Preparation
    Saute onion and celery in margarine.
    Add chicken pieces; brown lightly.
    Stir in seasonings and water, bringing to a boil. Cover and simmer for about 1 hour.
