Ingredients

3 egg yolks
1/2 c. (1 stick) lightly salted butter, frozen
1 Tbsp. water
2 Tbsp. lemon juice
1/2 tsp. salt
Preparation

Combine egg yolks, frozen butter, water, lemon juice and salt in a heavy saucepan.
Stir over medium heat with wire whisk until butter melts and sauce is smooth.
Remove from heat before it becomes too thick.
Cool completely.
