Scalloped Cattails - cooking recipe

Ingredients
    6 green cattail spikes
    1 qt. water
    1 egg, beaten
    1/4 c. melted butter
    pinch of nutmeg
    1/4 tsp. pepper
    1/2 c. milk
    1/4 c. cheese of choice
    2 Tbsp. butter
Preparation
    Drop the cattails into a quart of boiling water and boil for 4 minutes.
    Drain and cool.
    Scrape off enough of the green part to make about 1 1/4 cups and place in a bowl.
    Add egg, butter, nutmeg and pepper.
    Mix well.
