Popeye Muffins - cooking recipe

Ingredients
    2 c. flour
    1/4 c. sugar
    2 tsp. baking powder
    1 tsp. salt
    3/4 c. milk
    1/4 c. vegetable oil
    2 eggs
    2 (10 oz.) pkg. spinach
    6 oz. shredded Cheddar cheese
Preparation
    Combine flour, sugar, baking powder and salt.
    Add milk, oil and eggs.
    Stir until combined.
    Stir in spinach and 1 1/4 cups of the cheese.
    Evenly spoon batter into cupcake papers.
    Sprinkle muffins with remaining 1/4 cup cheese.
    Bake 20 to 25 minutes until toothpick comes out clean and cheese is melted.
