Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. vegetable oil
    2 c. sugar
    2 c. grated peel zucchini
    1 tsp. vanilla
    3 c. flour
    1 tsp. salt
    1/2 tsp. baking soda
    3 tsp. cinnamon
    1/2 tsp. baking powder
    1/2 or 1 c. chopped nuts
Preparation
    Measure and stir dry ingredients into mixing bowl.
    Blend eggs, oil, sugar and vanilla in blender and add to other ingredients.
    Grate zucchini in blender a small amount at a time. (Put in with water and drain in sieve.)
    Put in bowl with dry ingredients; mix well.
    Pour into greased and floured 2 pound coffee can, shortening can or 2-quart mold.
    Place can in crock-pot.
    Cover with 8 paper towels.
    Cover and bake on high 3 to 4 hours or more.
    Can bake at 350\u00b0 for 50 to 60 minutes.
