Enchilada Pie - cooking recipe
Ingredients

2 onions
2 peppers (red, green or combination)
2 cloves garlic
1 (28 oz.) can tomatoes
2 lb. ground beef or ground chicken
salt and pepper
1 Tbsp. red wine vinegar
2 tsp. cumin
1 tsp. oregano
6 flour tortillas
2 jalapeno peppers (optional)
3 oz. Cheddar cheese
3 oz. Monterey Jack cheese
Preparation

Saute peppers and onions.
Add ground beef or chicken (browned).
Add garlic, drained tomatoes, salt, red wine vinegar, oregano and cumin.
Fry together.
Simmer 10 minutes.
