Bird'S Nests - cooking recipe

Ingredients
    4 large Idaho potatoes, peeled and shredded
    oil for deep frying
Preparation
    Use a 4-inch diameter strainer or flour sifter.
    Dip in hot oil to coat.
    Shake off excess.
    Line strainer with shredded potatoes. Place a 2-inch strainer on top of potatoes to keep in place.
    Dip into hot oil until golden brown.
    Tap out of strainer onto paper towels.
    Loosen with knife if necessary.
    Continue until all potatoes are cooked.
    Fill with creamed chicken or any stir-fry recipe.
