Arroz Con Leche(Rice Pudding - Cuban Cookery) - cooking recipe
Ingredients

1 c. short grain white rice (Dixie Lilly or Pearl)
3 c. water
2 pieces lemon peel
1/2 gal. Grade A whole milk
2 cinnamon sticks
2 1/4 c. sugar
1/2 tsp. salt
2 tsp. vanilla extract
ground cinnamon
Preparation

Boil water with the cinnamon sticks and lemon peels; add rice and cook it covered until tender, 10 to 15 minutes.
Add to the milk which has been heated in another large pot in which the sugar was added at the end to dissolve better.
Cook at medium heat on the stove burner approximately 1 hour, stirring occasionally to prevent sticking to bottom of pot.
Do not let it get too thick.
