Shrimp Victoria - cooking recipe
Ingredients

1 lb. raw shrimp, peeled and deveined
1 small onion, finely chopped
1/4 c. butter
6 oz. fresh mushrooms, sliced
1 Tbsp. flour
1/4 tsp. salt
dash of cayenne pepper
1 c. sour cream
1 to 2 tsp. sherry
1 1/2 c. wild or white rice
Preparation

Cook rice and keep warm.
Saute shrimp and onion in butter for 10 minutes until tender, but not brown.
Add mushrooms and slowly saute a few more minutes.
Sprinkle in flour, salt and pepper. Stir in sour cream and cook gently for 10 minutes.
Add sherry and cook until well blended and hot.
Serve over rice.
Double recipe to feed 4 to 6 people.
